Palak Paneer
Ingredients
- 8 oz spinach
- 2 oz kale
- 2 oz fenugreek leaves
- 6 green chilies
- 3 garlic cloves
- 200 g paneer
- 1 tbsp ghee
- 1 tsp cumin seeds
- 1 tsp mustard seeds
Instructions
- Blanch 8oz of spinach, 2oz of kale, and 2oz of fenugreek leaves in boiling water for 2 minutes.
- Add to blender alongwith 6 whole green chilies, and 3 garlic cloves and blend to a smooth puree.
- Cube 200g of paneer into bite-sized pieces.
- Heat 1 tbsp of ghee in a pan. Add 1 tsp of cumin seeds, 1 tsp of mustard seeds and let them splutter.
- Add the puree to the pan and mix well. Cook for 5-7 minutes on medium heat.
- Add the paneer cubes and simmer for another 5 minutes.
